Delicious autumn recipes – everything you need to cook (and drink) this fall
As the days are getting shorter and colder it’s time to start cooking all that nice comfort food and treat yourself to some wholesome and tasty meals. Might as well make the most of it, right? Here we give you a selection of some of our delicious autumn recipes that make for great meals for autumn moods:
It’s the high season of pumpkin, squash and zucchini right now!
So, why not start out with this delicious grilled butternut squash salad with roasted Parma ham, arugula and a soft and creamy ball of Burrata? Rich and powerful tastes that perfectly match autumn!
Green and yellow zucchinis abound right now, and they make for scrumptious and colorful food. Try this super easy recipe for zucchini toast. It’s perfect for an easy appetizer or casual dinner.
Quiches and tarts are great ways to use all the autumn veggies that are out there right now. This is our take on a classic French onion quiche. We’ve stepped up on the cheese though, and added no less than two of our favorite ones. The Gruyere and Brie go amazingly well together and with a hint of fresh oregano it has that taste of late summer, early autumn. Yum!
In the mood for more Brie? What about this recipe for baked, melted Brie with pears in brandy, almonds and tarragon? Try it when you come in from the cold on a dark autumn or winter day. It will surely warm up your bones and brighten your mood.
Wholesome dishes like risotto can be adjusted to fit every season. In my book risotto is definitely comfort food. This green, vegetarian version with peas, fennel and mint is both fresh and rich. Any leftovers make for awesome Arancini! It’s a wonderful way of making use of a good risotto, especially if, like me, you tend to make too large a portion for one meal.
