    Chicken puttanesca

Do you ever get a craving for Italian food and that particular taste of sun, salt and tasty ripe tomatoes? I do, especially on warm summer days, but when the weather is nice, I like dinner meals to be easy and convenient so I get to spend time outside rather than hours chopping away in the kitchen. This easy chicken puttanesca almost takes care of itself in the oven, while you get to relax in a deckchair on the patio, yet, it still has lots of those wonderful Italian flavors I love. So it really is a win win dish. Literally, the name of the dish translates into ‘chicken, prostitute…

    Creamy chicken tarragon

BĂ©arnaise sauce is one of my family’s absolute favorite sauces, and if I was prepared to make it every day, I’ve no doubt they’d eat it. Though the sauce for this creamy chicken tarragon is not butter, egg yolk and vinegar based like real bĂ©arnaise, it does have a very similar taste. But with this recipe you don’t have to frantically whisk the sauce right up to the moment before serving. Classic chicken salads in Denmark typically include curry or asparagus, but since I didn’t have either, I tried something else and ended up with a salad I thought was even more yummy than the one I originally intended. For me it is a go to recipe because it uses ingredients I usually always have in stock. I simply need to buy chicken and…

    Not too hot for kids

When the weather turns cold, I like to eat something that’s a little hot and spicy to get the warmth back in my body. The problem is that my kids won’t eat anything hot and spicy, except this very mild version of the Indian dish murgh makhani or butter chicken as we Westerners like to call it. I only use the hot spices in this recipe in sparse amounts, and I use honey to soothe down the taste to accommodate the delicate taste buds of little ones, and yet there is still heat enough to get the internal fire going, but not enough to burn or scare off anyone. And…

Need an idea for an everyday kid-friendly salad? Try out this easy to make chicken pasta salad! My normal workday starts at 8 a.m. and ends at 4 p.m. Before I go to work I need to wake and feed the kids (I have 3), get them dressed and drive the youngest of them to school.
