    Spicy Christmas cookies

It’s time to start planning which Christmas cookies to bake this year! Danish ‘brunkager’, literally ‘brown cakes’, have always been my favorite Christmas cookies. With all their warm aromas from cinnamon, cloves, ginger, all spice and nuts, these wonderful little treats smell and taste like real Christmas to me. Just wait till you put them in the oven, and you’ll see what I mean. There are tons of variations of these cookies, and you can find cousins of these all over Scandinavia and northern Germany. But since this recipe for these spicy Christmas cookies comes from my ancestors, of course I think it’s the best. A ‘brunkage’ is also a…

    French meatballs

So why call this recipe French meatballs? Honestly, I can’t really claim this recipe to be authentically French, nor did I ever have anything like this in France. In truth, the recipe actually draws on a very delicious ready made, just pop-in-the-oven, meal I once bought in a little shop in torvehallerne in Copenhagen, an upscale street food market in the middle of the city. Pricy and quite hipster, it is honestly a great place to visit if you get the chance to visit the capital of Denmark. I’m not sure the shop still exists and I forget the name of it, otherwise I would surely have given a referral.…

    Marvellous apple and macaroon muffins

Crunchy on the outside and moist and fluffy on the inside, these apple and macaroon muffins always satisfy my cake cravings. Like most muffins they are quick and easy to make, and a wonderful way to use apples. The recipe grew out of an old recipe for macaroon cakes that I found in one of my granny’s old food magazines, and since I have a general hankering for apple recipes, I thought, why not combine the two? I decided to make these again the other day because my eight-year-old son suddenly found that green apples, having been his favorite apples for as long as I can remember, were no longer…

    (Almost) guilt-free snack

A couple of weeks ago we posted a recipe for traditional Danish rye bread with lots of seeds. Here is a great recipe for rye bread chips, a fabulous way of making use of any dry leftover rye bread, while at the same time making yourself one good and really quite healthy snack. If you’re familiar with a typical Scandinavian diet you probably know that people in Denmark, Norway and Sweden have an almost religious relationship with rye bread. It’s definitely an integral part of our diet and it’s something most of us miss terribly when we are abroad. Maybe that’s why in recent years it’s become quite popular to…

    Autumn gnocchi

The flavors of sage, Parma ham and gnocchi go really well together. In this autumn gnocchi recipe we’ve added some green zucchini and chopped almonds on top for a bit of crunch. These are wonderful autumn flavors! Of course you can go the extra mile and make your own gnocchi, but in well-stocked stores they usually carry ready made good quality gnocchi. Also, the bonus if you use the ready made kind is that you’ll have your autumn gnocchi dinner ready in less that 30 min. This time of year when it’s dark and gloomy outside when you come home in the afternoon, it’s vital that making dinner is not…
