    Perfect side dish for BBQ

In my house we have 3 barbecues!! You might think that we would never have the need for using all 3 at the same time, but we do. If we are making different dishes for a family gathering it is nice to have the option to cook at different temperatures and have room to cook more than one thing at the same time. While I am busy barbecuing, I don’t have time to make a complicated potato dish to go with the meat or sausages. That is why it’s necessary to have a potato side dish that I can make ahead and that goes perfectly with almost anything with the…

Pan + cakes + lemon = Best pancakes ever

So you thought you already knew the best recipe for pancakes? I can tell you now, you don’t. Unless, that is, you’ve ever swung by my mom’s house in Denmark and nicked her recipe. These pancakes not only look, smell and taste heavenly, they also have a medicinal effect. I figured this since every time I can remember having bumped my knee or fallen off the bike as a kid, my mom’s pancakes would make all pain go away. You might argue that this is not sufficient evidence to claim that a pancake has healing powers, but it works on my own kids too. I usually serve these flat delights…

    Sweet and sour!

Every Sunday my family and I go to my parents house to eat Sunday dinner and catch up on what’s happened during the week. My mom makes traditional Danish dishes that are almost always accompanied by this side dish. It goes well with a wide variety of dishes from roast to ‘smoerebroed’ (traditional Danish rye bread open sandwiches). I actually can’t remember the last time she didn’t make these sweet and sour cucumber goodies. But beware!!! Once you tasted them you won’t make a sandwich without them again. Pickled cucumber salad – Danish style (Agurkesalat) Ingredients 1 cucumber sliced as thinly as you possibly can 1/2 cup (100 ml) distilled…

    Praised be the potato

Well… I have made and tasted a lot of potato dishes. But none of them compare to the creamy and salty taste of this one. The curious thing about this creamy potato dish is that I have never succeeded in making too much. For the portion shown in the picture, which I thought by far would be too much for 8 people, I used almost 7 lbs of potatoes. That is a lot, as anyone who has ever tried peeling such an amount will attest to! I was convinced that there would be leftovers, but by the end of the night there was nothing left. Not all of it went…

  • Roasted butternut squash salad with Parma ham and Burrata
    Low-carb,  Salads,  Starters and appetizers

For the love of butternut squash!

Fall is here, there’s no way around it. As the temperatures begin to drop and days in the sun become fewer why not celebrate all the colorful and magnificent seasonal vegetables and greens that start to appear in the grocery stores and farmers’ markets? Here’s a grilled butternut squash salad with Parma ham and Burrata that will do just that! With their funny and quirky shapes, pumpkins and winter squash have always had a strange appeal both to my eye and my stomach. In some way they seem to offer a needed comfort that though winter will be here soon, everything will be all right, and there will be loads…

  • Dinner,  Salads

Easy now… I already made dinner.

Need an idea for an everyday kid-friendly salad? Try out this easy to make chicken pasta salad! My normal workday starts at 8 a.m. and ends at 4 p.m. Before I go to work I need to wake and feed the kids (I have 3), get them dressed and drive the youngest of them to school. All of that takes about 1.5 hours. After I get off from work I have to pick up my youngest and drive home to make dinner. If dinner is not served by 6 p.m. I have 3 very hungry kids shouting and crying until they are fed. It all runs on af pretty tight…

Lemons and desserts… My favorite combination

I always thought that one of the best things about cooking and tasting your own creation afterwards is the memories that smells, tastes and looks can bring you. Both of my grandmas were fierce when it came to making desserts and they actually both made their own version of the Danish lemon mousse that I will give you the recipe for in this post. It’s impossible for me to choose which one was my favorite, because they were both very very good, but my own version is closest to the one my grandma Agnes, on my mom’s side, used to make. Each time I take a spoonful of this mouthwateringly…

    The bunny takes it all

I’m not a great fan of cakes that look great but have little taste. This cake that I made for an easter dinner is a winner in both taste and presentation, yet, it is pretty easy to make. If you look at the picture, you can see that I was not the only one who thought the cake was tasty. The bunny dived right into the middle of the carrot cake and ate all the cheese frosting! Carrot cake with cream cheese frosting Ingredients The carrot cake 4 carrots, coarsely shredded (300 g/10 oz) 150 g/5.5 oz soft butter 100 g/3.5 oz of sugar 100 g/3.5 oz brown sugar 150…
