• Vanilla butter cookies - classic Danish Christmas cookies
Bread and baked goods,  Cakes and desserts

It’s beginning to look a lot like Christmas

Last week we shared our recipe for brown Christmas spice cookies – Danish ‘brunkager’. Here’s another wonderful recipe for Christmas cookies, this time straight from my great grandmother Inger’s old recipe book. I guess most people are familiar with the Danish vanilla butter cookies that you can buy in typically blue tins, often with photos of famous Danish places on them. Whether these mass produces cookies leave a positive or negative impression of Danish baking on those who try them, is not for me to judge, but these homemade ones are definitely a much more interesting taste experience, and I think far more worth the calories. And they are super…

  • Onion quiche with Brie and Gruyère - classic French tart with two amazing cheeses

    Two cheese onion quiche

There is something rather retro about quiches. For me, they always seem to bring back memories of buffets in the ’90s. Luckily, most of them are fond memories, which I guess is why I continue to make a lot of quiches. This onion quiche with Brie and Gruyère is my own variation of a classic French onion quiche, basically a product of me being really fond of both French onion quiche and cheese, especially Brie. The result is a very soft, creamy and fluffy quiche with lots of rich and deep taste, perfect for lazy autumn lunches, dinners, brunches… or, buffets! The trick to a really good quiche, though, is…

  • Sauces, dips, butters

    Let’s nail that Béarnaise!

If you are from Denmark, or have ever lived in Denmark, you will know that Danes love sauce. In fact, I wouldn’t be surprised if Denmark came in first place on a list of most sauce eating nations in the world. (And béarnaise sauce would certainly be among the absolute favorites.) If you don’t believe me, try the cruel experiment of serving a good steak with no sauce to a Dane. I promise you the disappointment and disillusionment will be of unforgettable proportions. It’s hard to say exactly why béarnaise especially has such a dear place in the hearts and bellies of most Danes. But the strong craving for this…

  • Mini Sarah Bernhard cakes with macarons and dark chocolate mousse

    Mini Sarah Bernhardt cakes

Mini Sarah Bernhardt cakes were my grandma Grethe’s signature cakes. Whenever she and her husband would have friends or family over for one of their lavish dinners, she would make these little mouthwatering sweet treats. She always served them after dinner with coffee and tea and chocolates, as if we hadn’t already stuffed ourselves with their delicious three-course dinner. But curiously, these little miracles always seemed to disappear before everyone had finished their coffee. And though I was only a kid, I always managed to get my share and gulp down at least a handful.   Like the famous actress whom these cakes were named after, my grandma was a…

Pan + cakes + lemon = Best pancakes ever

So you thought you already knew the best recipe for pancakes? I can tell you now, you don’t. Unless, that is, you’ve ever swung by my mom’s house in Denmark and nicked her recipe. These pancakes not only look, smell and taste heavenly, they also have a medicinal effect. I figured this since every time I can remember having bumped my knee or fallen off the bike as a kid, my mom’s pancakes would make all pain go away. You might argue that this is not sufficient evidence to claim that a pancake has healing powers, but it works on my own kids too. I usually serve these flat delights…
